Japanese restaurant YUI offers dishes prepared with the utmost care and attention, making the most of the traditional culinary techniques and skill of our chefs.
The Japanese cuisine at YUI is based on dashi-jiru, the traditional Japanese stock. Our SHOKADO Bento is made from sustainable ingredients such as locally produced and environmentally friendly seafood.

After graduating from the Kyoto Culinary Institute, Fujisawa worked at various ryokans and hotels throughout Japan before joining The Ritz-Carlton, Kyoto as Sous-Chef at Mizuki.
Fujisawa then worked at Hotaru in the Kyoto Brighton Hotel as before taking up his current position at HOTEL THE MITSUI KYOTO.
