Circular Food Collaboration with Partner Farms
In collaboration with Aoki Farm in Kyotango, we recycle used coffee grounds from the hotel, drying and transforming them into fertilizer.
The organic vegetables grown using this fertilizer are then delivered back to the hotel and used in our breakfast dishes and vegan cookies available om our shop.

Reviving Tableware through Kintsugi
Broken tableware from our restaurants is repaired by Kyoto artisans using the traditional art of kintsugi (gold joinery).
Reducing Plastic Waste
To minimize single-use plastics, we provide eco-friendly amenities such as toothbrushes made of bamboo and mineral water “Fushimizu” from Kyoto’s Fushimi district in paper cartons.
These small but thoughtful choices reflect our ongoing commitment to environmental care.
Recycling Food Waste and Used Cooking Oil
Food waste generated within the hotel is composted and reused as fertilizer to support local agriculture.
Used cooking oil is recycled into soap, contributing to waste reduction and a circular economy.
Using Locally Sourced Ingredients
To reduce food mileage, we actively use ingredients sourced mainly from Kyoto and neighboring regions.
By doing so, we not only minimize environmental impact but also help carry forward the authentic flavors and culinary traditions of the area.
