Sustainable Dining for Local Production and Local Consumption A Restaurant Event with ARMANI / RISTORANTE from Jan 21, 2022 - Jan 31, 2022

HOTEL THE MITSUI KYOTO is delighted to announce its second sustainable dining event, Sustainable Dining: Local Production for Local Consumption, in collaboration with ARMANI / RISTORANTE in Ginza, Tokyo.

ARMANI / RISTORANTE Executive Chef Carmine Amarante, who was recently awarded "The chef of the year" by Gambero Rosso, who in December last year was awarded Chef of the Year by Gambero Rosso, the prestigious Italian food and wine publisher, will personally prepare a feast of sustainable beauty at our Italian Restaurant FORNI, using mainly Kyoto ingredients to showcase local production and consumption.

The menu will be accompanied by a selection of Japanese sparkling wines and wine pairings selected by our sommelier.
This is an opportunity to experience the dishes and flavours of Chef Carmine, who was recently awarded "Chef of the Year" last year in 2021, at HOTEL THE MITSUI KYOTO.

A Sustainable Gala Dinner hosted at SHIKI-NO-MA, limited to 10 seats only.

Located in our courtyard garden and fashioned from Japanese cypress, SHIKI-NO-MA is the venue for a special one-night-only gala dinner, showcasing local production for local consumption.

January 21st, 2022; Doors open 6pm, Dinner service begins 6:30pm

Local Production for Local Consumption: Sustainable Lunch and Dinner Courses

ARMANI / RISTORANTE Executive Chef Carmine Amarante will personally prepare and serve these special courses for three days only. The lunch and dinner courses will feature seasonal produce and will be accompanied by a selection of Japanese wines.

Lunch Course

An example of one dish/wine pairing:
Kyoto Ohara Yamada Farm Organic ‘Wild Eggs’ Parmigiano Espuma and White Truffles paired with Tsugaru Pinot Noir Sparkling Rosé 2017*.  
*Tsugaru is a famous apple growing region. The grapes that grow here have a hint of apple-like sweetness and acidity, creating a fresh and relaxed fruitiness. This is a very Japanese nuance, different from the slight acidity of champagne. An opportunity to enjoy a new taste experience with Japanese wine.

Dinner Course

January 22nd and 23rd, 2022, 17:30 - 20:30 (L.O.)
20,000 yen per person (incl. tax and service charge)

Beef Cheeks with Smoked Potato Espuma and variations of Tanba and Daikoku Shimeji Mushrooms paired with Shiojiri Muscat Berry A aged in Oak Barrels from the Shiojiri Winery.

ARMANI / RISTORANTE Special Afternoon Tea

ARMANI / RISTORANTE and HOTEL THE MITSUI KYOTO, purveyors of two of the most popular afternoon teas in Japan, have teamed up to create an original afternoon tea that is sure to garner a lot of attention.

January 22nd to 31st, 2022; two seatings are available: midday and 2:30pm
7,500 yen per person including free flowing beverages (inclusive of tax and service charge)

■ Chef Amarante shares his thoughts on the event to be held at HOTEL THE MITSUI KYOTO:

I am very much looking forward to this collaboration event, as there are great similarities between HOTEL THE MITSUI KYOTO and ARMANI / RISTORANTE, as I believe there are great similarities in the way we think about beauty: we both value tradition, we both like simple and refined design. Despite our very different backgrounds, we share a common philosophy of beauty and we are confident that this collaboration will be a great success.

■ Chef Amarante’s thoughts on Kyoto, and local production for local consumption:

Kyoto is one of my favourite cities in Japan because of its unique culture, its streets, its food and its art. I also feel that it is similar to the old cities of Italy, such as Florence and Siena. Kyoto is also a treasure trove of wonderful ingredients. In this collaboration we will also be using fresh ingredients from Kyoto, and I am looking forward to getting my hands on some of this excellent local produce.
